Khaman Dhokla is a vegetarian food item that originates from the Indian state of Gujarat. Made from a fermented batter derived from rice and split chickpeas, khaman dhokla is my absolute favorite. It is easy to digest and a very healthy dish. It can be eaten for breakfast, as a main course, as a side dish, or as a snack.
Kadhi Badi Dish : I got a chance to taste the Kadhi Badi when I visited Punjab for a friend’s wedding. The dish was made with buttermilk as its base and had dumplings which were similar to Pakodas. The dish itself was spicy and had a touch of sourness from the buttermilk and made for a very satisfying meal.
Malpua Sweet Dish : My visit to Jaipur always reminds me of a dessert dish that I tasted there, called the Malpua. It was prepared by frying a watery dough made of wheat or maida flour. The one I tasted had bananas and plenty of dry fruits too. The fried dough is then soaked in sugar or jaggery syrup with hints of rose water to add to the richness.
